Sweet Potato Brownies

I Love these when I'm feeling like a sweet treat! They are so moist and even my non-sweet potato loving family Loves them!! I hope you enjoy too!

1 medium sweet potato/ yam, peeled & grated using the larger holes of the grater. 
(about 2-2 1/2 cups grated)
2 whole eggs
2 tsp vanilla extract
1/2 cup raw honey, melted if too thick
1/2 cup olive oil or coconut oil
1 heaping TBS baking powder
1/2 TBS baking soda
1 cup unsweeted baking cocoa powder 
2 TBS coconut flour

Preheat Oven to 365. Mix all ingredients together. Pour in square or small rectangle baking dish sprayed with non-stick spray. 
Bake 25-30 minutes until toothpick comes out clean. 
*optional- melt enjoy life chips (dairy free, soy free, gluten free) or other dark chocolate chips to spread on top. Taste just fine without and is less sugar..I like this option.:) But, the kids love the chocolate spread on top. :) 
Makes 12 squares.

(without the chocolate on top & made with coconut oil: 181calories,18 g carbs, 11 g fats, 3 g protein per serving)
