I went off of the plexus products for a week...mostly because I had let myself run out without ordering some in time. I mostly had given my stock to others who really needed it and was waiting for more to come. A little Story....This PLEXUS stuff really works!!

A little Story....ok a long story smile emoticon But bear with me....
Ok, I'm not even kidding. I usually hate different companies that try to sell me health and fitness products! All the different ads I've been seeing is like blah, blah, blah! No joke! 
But, as a Nutrition coach I know the importance of gut health! And I've experienced it first hand. I mean I've had gut issues my whole life, my digestion just never has worked well. I've gone through food sensitivities that led to leaky gut and severe adrenal fatigue, hypoglycemia, thyroid probs, joint pain, blurry vision, heart palpitations, nerve problems....so much more..and then found out about the gene mutation I had MTHFR which could also lead to those problems and many more that I was having. I've been through the ringer the last couple years especially. It has not been fun! It has sent me into a depression and no energy to function and not able to eat many foods. My body was just not working for me! I have taken many probiotics, gut healers and cleansers, of course multivitamins, things for adrenal fatigue, injections, things to help with hypoglycemia...so many things! I have come along way with healing my body with foods! Recently, I was about out of probiotics and vitamins and as much as I didn't want to try Plexus for some reason one day I was checking out the ingredients. Ingredients are super important to me and I was pleasantly surprised that all these supplements were whole food supplements which is ideal. I was shocked and really liked that Plexus WAS NOT another stinkin' weight loss company to try and sell me a magic potion but a trusted company with important whole food supplements that everybody can benefit from but especially those with blood sugar problems, fatigue, achy joints, arthritis, thryoid problems, trouble losing weight, GI issues and so much more. Most people don't realize that our gut is considered our 2nd brain and really what we put into our bodies is super important. It has every effect on how our body functions. Most Americans have 80% bad yeast in their gut when really it should be 80% good yeast. Our diets are so poor causing all these problems and that needs to change. Quality supplements like probiotics, magnesium, vit c, antifungals, multivitamins and things are sooo important for our health. My food choices and smart exercise choices will always be number 1 for me. But, quality supplements are so beneficial and help a TON! 
So, as I was needing new probiotics and other vitamins, one day for some crazy reason I decided to order some from Plexus. It was actually cheaper than what I normally get and I wasn't getting anything different that I didn't already take. So, I thought why not!? I started using the probiotic (we need that healthy gut yeast), Xfactor multivitamin and bio cleanse (to help clean out intestines and arteries and oxygenate the body). I was so shocked that within a couple days my digestion was functioning properly like it hardly ever has before. (I have issues people..haha). I was feeling so good and so shocked at how well this was working.
Couple weeks later...My son, Ammon, poor guy, I can see SOOO many of my symptoms in him and we try really hard to eat well for the food sensitivities. Sometimes we are better than others. But, the week after Christmas Break he missed that whole week of school because he was in such severe stomach pain. He was throwing up anytime he tried to eat and anything he did happen to get down was just not digesting at all. He cried so much and it was hard to watch, I cried too because I just didn't know what to do for him anymore. Just a few months before this the doctor did an XRay and it showed his WHOLE stomach was filled with Bile that would not come out, it would not digest....ewww and sad! Things for him and I just do not break down and process in our digestion like they should, especially the foods that are hard to break down like Gluten, Dairy, Sugar. So, I was not knowing what to do and all of a sudden a light came on! "duh...this Plexus biocleanse and probiotic is working wonders for me, maybe it will work for him too." It's safe for kids!! It's real ingredients...no bad chemicals. So, I broke it in half and put it in a little bit of 100% juice and he guzzled it right down. The next day!!! It worked so well!! He was not in any more pain, he was able to go to the bathroom (sorry tmi :)) But, he and I were both sooo happy!! I immediately signed up for $35 to get them at wholesale because I knew I was going to be sticking with these and I wanted the wholesale price! We have both been on it every day since and have never felt better.
We also started trying the pink drink everyday because it helps the body detox (which I need help with because of MTHFR), it's great for your kidneys and cholesterol and blood sugar (which I also need help with). And I love that it gives me energy which feels sooo amazing after coming back from Stage 3 adrenal fatigue. 
*moral of this long story is....I have soooo many friends and family who talk to me about their health struggles and I know that if this works for me and my son so well, it can help somebody else too. Don't knock it until you try it! I'm super happy that I did!

Crockpot Mexican Shredded Beef

Easy dinner and yummy flavor! This ones a keeper!


Yield: 6-8 servings | Serving Size: 1 cup, Calories: 264, Total Fat: 9.7 g, Carbohydrates: 4.4 g, Protein: 38.2 g

Ingredients
2 lb chuck roast
3 cloves garlic, minced
1 jalapeño, seeded and finely diced (I usually don't add this)
1 small onion, finely diced (about ½ cup)
1 (8 oz) can tomato sauce
¼ cup lime juice
1 tbsp chili powder
½ tsp cumin
¼ tsp cayenne pepper
Salt and pepper

Directions
Place the onions, jalapeño, and garlic in the bottom of a 4 quart slow cooker. Season the beef with salt and pepper on all sides and place on top of the onions.
In a medium bowl or measuring cup, whisk together the tomato sauce, lime juice, chili powder, cumin, and cayenne. Pour the spice mixture over the beef and coverd

Cook on low for 8-10 hours or high for 4-5 hours
Once the beef is cooked and tender, use two forks to shred the beef. Stir the beef with the cooking juices and keep warm in the slow cooker until ready to serve.

Serve over whole wheat and/or homemade flour tortillas, corn tortillas or rice or over a bed of lettuce with your favorite toppings such as salsa, avocados, and tomato.
Serves 6-8

Sweet Potato Brownies

I Love these when I'm feeling like a sweet treat! They are so moist and even my non-sweet potato loving family Loves them!! I hope you enjoy too!

1 medium sweet potato/ yam, peeled & grated using the larger holes of the grater. 
(about 2-2 1/2 cups grated)
2 whole eggs
2 tsp vanilla extract
1/2 cup raw honey, melted if too thick
1/2 cup olive oil or coconut oil
1 heaping TBS baking powder
1/2 TBS baking soda
1 cup unsweeted baking cocoa powder 
2 TBS coconut flour

Preheat Oven to 365. Mix all ingredients together. Pour in square or small rectangle baking dish sprayed with non-stick spray. 
Bake 25-30 minutes until toothpick comes out clean. 
*optional- melt enjoy life chips (dairy free, soy free, gluten free) or other dark chocolate chips to spread on top. Taste just fine without and is less sugar..I like this option.:) But, the kids love the chocolate spread on top. :) 
Makes 12 squares.

(without the chocolate on top & made with coconut oil: 181calories,18 g carbs, 11 g fats, 3 g protein per serving)

Maple Pecan Sweet Potatoes

I love these. I've made then the last 2 Thanksgivings and they do not dissappoint.

Maple Pecan Sweet Potatoes
 Serves 10

What you’ll need:
2 1/2 pounds sweet potatoes cut into 1-inch cubes
2 oz. pecans, chopped 1/3 cup
100% pure maple syrup
1 tablespoon butter or ghee (clarified butter without the milk solids)
1/2 teaspoon salt
Juice of 1/2 lemon
Pepper to taste

How to make it:
1.  Preheat oven to 400 degrees F.
2.  Arrange sweet potatoes in a single layer in 9×13 inch glass dish.
3.  Combine maple syrup, butter, salt, pepper and lemon juice in a bowl, and pour over potatoes.
4.  Toss to coat and sprinkle pecans over top.
5.  Cover potatoes with foil bake 15 minutes.
6.  Uncover, stir and bake again, stirring every 15 minutes, until tender and starting to brown for 45-50 minutes longer.

Cleaner Pumpkin Pie

1 TBS vanilla
1 C Stevia in the Raw
1/2 tsp salt
2 tsp cinnamon
1/2 tsp pumpin spice
shake of nutmeg
4 eggs whites
1 cup almond milk
2 Cups pumpin (can do 2 1/2)

Mix well, pour in pie pan or square casserole dish

Bake 350 45-50 minutes

Evidently it's NATIONAL DONUT DAY!


Who comes up with all these crazy days anyway??

My youngest child LOOOVES DONUTS! He is obsessed with donuts...something we need to work on..haha. But, these sound yummy to try and so much healthier than regular donuts!

I saw this recipe on Super Sister Fitness instagram today. 


Try making these Healthy Pumpkin Spice donuts 🎃🍩 

INGREDIENTS 

1 cup pumpkin puree 
2 tbs coconut oil
1 large egg
1/2 teaspoon vanilla extract
1 tsp pumpkin spice
3/4 teaspoon cinnamon
1/4 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup oat flour (blend regular oats and measure after)
1/3 cup lightly packed brown sugar (I may try and substitute this with coconut sugar)


For the cinnamon sugar topping:
1/4 cup butter
1/4 cup coconut or cane sugar (pure maple sugar is great to bake with too)
1 tsp cinnamon


INSTRUCTIONS 
Preheat the oven to 350 degrees. Spray a donut pan (oooo...I need one quick :D) very well with nonstick spray.
In a large bowl, stir together the pumpkin, coconut oil (measured when completely melted), large egg, and vanilla extract until completely combined.


Add in the baking soda, cinnamon, baking powder, salt, and pumpkin pie spice. Stir until completely combined. If you really like spice, you can add a little more pumpkin spice.
Stir in the brown sugar and oat flour (blend regular old fashioned oats or quick oats in a blender or food processor until they resemble flour. Measure AFTER blending, not before).


Place thick batter in a large ziploc bag. Seal the bag well and cut the tip off of one bottom corner.
Pipe the batter into your prepared pan and bake for 12-15 minutes or until a toothpick comes out clean.
Once donuts are baked, remove from the oven and melt butter. In a small bowl, combine sugar with cinnamon.
Dip donuts in the butter and quick roll into your cinnamon sugar mixture. Set aside and let cool.

White Chicken Chilli

I love soup weather! It's finally starting to feel like Fall here! (sort of) I live in the dessert...so sometimes we get a little tease of chill in the air and the next day it's hot! I'm hoping for a "real" Fall real soon! :)

This soup is so easy and so good!





White Chicken Chili

1 lb chicken, shredded (Sometimes I'll use Kroger premium canned chicken, 16 oz which is 1 1/3 can, sometimes we need easy! OR you can crockpot some chicken with garlic powder, salt/pepper, a little bit of chicken broth, let it cook all day until it's easy to shred, so yummy and easy, throw extra in the freezer or keep for fast meals in the fridge)
1 TBS olive oil
Add 1 chopped medium onion and cook in oil until transparent (or 1 cup frozen already chopped onion-my fave way!)
Add 2 tsp garlic powder and mix together


Then add:
2, 15 oz cans organic great northern beans
14 oz organic chicken broth
1, 4 oz can diced chillies (if you like a little spice, I never add these, I'm a wimp when it comes to spice)
1 tsp salt
1 tsp cumin
1 tsp oregano (I'm allergic so I don't add this either...bummer!)
½ tsp pepper


Cook and simmer for about 30 minutes then eat (or you can throw everything in a crockpot and cook for a few hours)


After it has simmered:
If you like it a little creamy, add ½-1 cup Coconut Milk (or regular milk).

Can add tortillas chips, avacado, cheese...etc, to garnish.

Yummy!  Yummy! Happy Fall!


Macros per 1 cup servings w/ out toppings. Makes about 6, 1 cup servings.

Teaching kids to Eat Healthy

It's hard to get kids to eat healthy if you don't start out that way when they are young. Changing habits is difficult,....as you may know ;) Here are a few ideas. Please share if you have some tips too. My kids use to be really good and lately they are not! Ugh! I had to be overly strict for a while for health reasons and I think that's what happened. It became such a big deal with food.  I don't want food to be so boring or a big deal that they never want to eat healthy. So overly strict really is hard in the long run! Which can be hard when it's for health reasons. So its been good for us to now create more of a balance and hopefully when they are older they will also make better choices too. Here are a few thoughts and ideas. Please share if you have some tips too!


*if you cheerfully let them know that that's what's available for a meal, then they will learn to enjoy it. It doesn't work if you have crackers and cookies and fruit snacks in your pantry and they know that if their cranky enough they can have it as a snack in an hour. Keep only healthier snacks, treats, foods in the house. If once in a while you want a treat, you go out of the house for the treat. Don't bring bad foods in!

*Sometimes having them involved in the process helps, making cute little sandwiches or salads. Having them help you pick things out at the store. Writing down a list of options and they get to choose the options. Trying to have a few options at a meal so that if they don't like one type of vegetable, they can focus on the fruit.

*Toddlers (and probably most kid) need to be exposed to a food 13 times before they accept it. So if they are expected to stay at the table until you dismiss them, and they see you relaxed and happy and enjoying healthy food and pleasant conversation, and often it is just a matter of time before they settle in. I know meals aren't always this way, but if it's a goal that you're working towards then you'll get there. Even if they don't want to eat, have them stay at the table until they are dismissed. It's family time!

*Your job is to provide the healthy food options in a reasonably appealing way, but you don't have to make them eat it. In fact, you shouldn't. Kids will eat minimal amounts at some meals and larger amouints at others. They are better at listening to their bodies than most adults are. They don't just eat to eat, they stop when they are full. If you help them to understand that even if they don't choose to eat that's fine (remove the power struggle) but they are supposed to stay at the table until they are excused. If your child isn't used to it, you may want to start with a minimum of five minutes but work up to 20 minutes over time. They can sit and be part of the conversation and connection. The benefits of family meals are well documented. Once the food is cleaned up, you can decide how you want to handle it but be consistent: either allow them to have their lunch later if they are hungry or specific snacks (nuts, fruit, etc) but usually say no snacks or juice until dinner when their natural hunger will make healthy eating taste better.

*You have to be cheerfully consistent and they will adapt. There may be plenty of meltdowns if you are working on changing your ways. If they are getting so many treats at school and friends houses etc, you can have them give them to you and at the end of the day, they could pick a better "treat" from the treat box.

*Most kids love dipping things So you can make a fondue type sauce, they can dip veggies or things in it to get them use to eating more veggies. Tacos or things that they can put their own fillings in/make themsevles is always good. You can also make things a little more fun once in a while, make Costco type samples...use toothpicks. My kids love that for some reason!

*I write the meals we make for dinner on large popcicles sticks and let my kids take turns choosing the menu for the week. I have a cute Weekly holder that they can put the sticks in for each day.

*Grow a garden!! Having your children help in the process will help them learn to love healthy foods!!

I make this seasoning in bulk: 1 tsp chili powder, 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder....I make extra to keep in a little container. Here are a few different protein ideas that I use to make it with.
*Broiled Seasoned chicken- Cut your chicken smaller pieces, line a baking sheet with foil, season the chicken liberally with your spice mixture, Sometimes I add about 1 TBS Olive oil as well and mix the spices an chicken all together and broiled in the oven on HI for about 15 minutes, watch it close though, you don't want it undercooked and defintely not overcooked. Have it with rice (brown, basmati or jasmine)/veggies or on top of a salad.
*Lean Ground Turkey- brown the turkey and add the seasonings. Use for taco salads, on top of sweet potato or mixed with quinoa or rice.
*Crockpot chicken (also great with pork loin, but pork is a fattier meat and not as healthy) 6-8 chicken breasts, 1/2 cup 100% white grape juice, liberally season with spice mixture, add any other spices...pepper, etc. Cook on low for 6-8 hours. Yummy on salad, in a wrap, with veggies, w/ rice, etc.
